Because the summer holidays have begun and we’d like to help you in your mission to forget the daily grind, this week we’re recommending an exquisitely summery (and incredibly healthy) recipe. Taken from the book Cuites: 60 recettes faciles pour lendemains difficiles (that roughly translates as ‘60 easy recipes for tricky mornings-after’, because let’s be honest: these sorts of things are a lot more common in summer). The recipe is the work of Angèle Ferreux-Maeght, whose restaurant La Guinguette d’Angèle (Paris) places an emphasis on seasonal and well-sourced produce.
Ingredients for one person:
One cup of coconut water
Six cooked beetroot
One well-ripened avocado
One banana
Juice of one lemon
A small piece of ginger
One soup spoon of honey
Slices of apple, spirulina, goji berries, pumpkin seeds
The prep:
Grate the ginger and mix all the ingredients in a blender until creamy.
Pour into a bowl and sprinkle with superfoods such as spirulina, goji berries, apple slices and pumpkin seeds.
